Tasty Orange Cake

I love an orange cake and this one is very tasty. You can serve it with whipped cream if you wish or you can even serve it with custard as a very tasty dessert.

It is very important to cream the butter and sugar very well for this recipe and for that it is ideal to use one of the Cuisinart Sm-55 5-1/2-Quart Stand Mixers to make this very easy. It is also important that when you add the eggs one at a time that you mix in each egg thoroughly before you add the other.

Ingredients:

  • 1 Cup soft butter
  • 2 Tablespoons on range peel
  • 1 Teaspoon bicarbonate of soda
  • 2 Cups of flour
  • 1 Cup chopped dates
  • ½ Cup chopped nuts
  • 2/3 Cup sour milk
  • 1 Cup sugar
  • 1 Teaspoon baking powder
  • Pinch of salt
  • 2 Eggs
Method:

  1. Preheat the oven to350 degrees Fahrenheit
  2. Prepare a bread pan
  3. Cream the butter and sugar
  4. Add the eggs one at a time
  5. Dissolve the bicarb in the milk
  6. Add the dry ingredients alternatively with the milk mixture
  7. Stir in the fruit
  8. Bake for one hour

Orange Syrup:

  • Juice of two oranges
  • 1 Tablespoon lemon juice
  • 2 Teaspoon orange peel
  • 1 Cup sugar
  1. Mix all the ingredient
  2. Bring to the boil and stir until all the sugar has been dissolved
  3. Simmer for about 5 minutes
  4. Let it cool completely in the fridge
  5. Pour over the hot cake as it comes from the oven.
