It is very important to cream the butter and sugar very well for this recipe and for that it is ideal to use one of the Cuisinart Sm-55 5-1/2-Quart Stand Mixers to make this very easy. It is also important that when you add the eggs one at a time that you mix in each egg thoroughly before you add the other.
Ingredients:
- 1 Cup soft butter
- 2 Tablespoons on range peel
- 1 Teaspoon bicarbonate of soda
- 2 Cups of flour
- 1 Cup chopped dates
- ½ Cup chopped nuts
- 2/3 Cup sour milk
- 1 Cup sugar
- 1 Teaspoon baking powder
- Pinch of salt
- 2 Eggs
Method:
- Preheat the oven to350 degrees Fahrenheit
- Prepare a bread pan
- Cream the butter and sugar
- Add the eggs one at a time
- Dissolve the bicarb in the milk
- Add the dry ingredients alternatively with the milk mixture
- Stir in the fruit
- Bake for one hour
Orange Syrup:
- Juice of two oranges
- 1 Tablespoon lemon juice
- 2 Teaspoon orange peel
- 1 Cup sugar
- Mix all the ingredient
- Bring to the boil and stir until all the sugar has been dissolved
- Simmer for about 5 minutes
- Let it cool completely in the fridge
- Pour over the hot cake as it comes from the oven.
