Tasty Low Fat Pork Recipe For Any Holiday And For Slimmers

I love it when I come across a recipe, suitable for all occasions that are tasty as well as low fat. Especially for those wondering about how to burn belly fat, being able to enjoy a tasty meal with everyone else is such a relief.

Orange Glazed Pork Tenderloin For A Tasty Low Fat Meal

Ingredients:
  • 1 pork tenderloin -- (approx 8-ounce)
  • 1/4 teaspoon coarsely ground pepper
  • 1/3 cup orange marmalade
  • 2 tablespoons chopped fresh mint
  • 2 tablespoons low-sodium soy sauce
  • 2 cloves garlic -- minced
  • favorite cooking spray
  • Fresh mint sprigs
Instructions:
  1. Trim any fat from tenderloin. 
  2. Cut into two pieces. 
  3. Cut a lengthwise slit down each piece, about 2/3 of the way through and then flatten. 
  4. Spritz tenderloin with cooking spray and then sprinkle tenderloin with ground pepper to your liking. 
  5. Combine marmelade, fresh mint, soy sauce, and garlic. 
  6. Place tenderloins in roasting pan and pour marmelade mixture over top and spread out evenly. 
  7. Bake at 350 degrees F for 35 minutes or until juices run clear. 
  8. Garnish with mint springs at serving time.

Lemon Berry Smoothie For The Coming Summer

Even though it may not look like it, summer is going to come again and then it will be smoothie time again! There is nothing better than a tasty smoothie when it is very hot, but there is nothing saying you cannot make a smoothie in winter! What You Need:

  • 1 (6 oz) container low fat lemon yogurt
  • 1 (20 oz) can crushed pineapple in its own juice, drained
  • 1 (16 oz) can blackberries in lite syrup, drained
  • 1 C ice cubes
How to Make It:

  1. Place the yogurt in the blender.
  2. Add the drained pineapple and blackberries.
  3. Place the ice cubes on top.
  4. Blend until smooth.

Pasta Salad with Zucchini and Cheese

What You Need:

  • 1 (1 lb.) box of shell pasta, cook as directed on the box and drained well
  • 3 T of herb flavored oil
  • 2 cloves of garlic
  • 1 T of ketchup
  • 3 small zucchini, quartered and sliced
  • 1 red bell pepper, julienned
  • 1 carrot, julienned
  • 1/2 C of feta cheese, crumbled
  • 1/2 C of Kalamata olives
  • 1/4 C of red onion, diced
  • 2 T of red wine vinegar
  • 1/4 t of salt
  • 1/4 t of pepper
How to Make It:

  1. Lightly oil the grill grate then prepare the grill for medium hot temperature.
  2. Place the cooked pasta into a large mixing bowl.
  3. Add 1 T of the oil and toss to coat well
  4. Place the remaining oil into a large mixing bowl.
  5. Stir in the garlic and ketchup until blended in well.
  6. Fold in the zucchini, peppers and carrots tossing to coat well.
  7. Place the vegetables on the grill and tossing frequently grill for 5 minutes or until lightly charred.
  8. Remove the vegetables and return to the bowl.
  9. Add the cheese, olives and red onions to the vegetables.
  10. Pour the vinegar into the bowl and toss to combine the ingredients together well.
  11. Season with the salt and pepper.
Makes 6 servings

The ketchup adds a wonderful flavor this pasta salad. It gives it that “barbecued” taste that goes well at any outside barbecue. If you have trouble finding herbed oil, olive oil will work just fine.

"Modern" Butter Cake

Ingredients You Will Need:

  • 5 Tablespoons of soft butter
  • ½ Cup lukewarm milk
  • 1 ½ Cups of castor sugar
  • 2 Eggs
  • 1 ¾ Cups of sifted cake flour
  • 3 Teaspoons of baking powder
  • 1 Teaspoon of vanilla essence
Method:

  1. Preheat the oven to 375 degrees Fahrenheit
  2. Prepare two 8 ½ inch cake pans by lining them with non-stick paper and greasing the pans with butter
  3. Add all the ingredients to the bowl of one of the Cuisinart SM-55 5-1/2-Quart Stand Mixers    
  4. Stir it through once with a wooden spoon to start the mixing process
  5. Beat the mixture for 2 minutes until well mixed and smooth in your Cuisinart SM-55 5-1/2-Quart Stand Mixer
  6. Pour the batter into the prepared cake pans
  7. Bake for 30 minutes until done
  8. Let the cake cool down in the pans for a little while and then turn them out
If you are not completely happy with the end result, try experimenting with the time you actually beat your mixture until you get a satisfactory result. If you mix it until it is smooth you should not have any problems. The cake can be iced and decorated as you prefer. Squash and More Chicken Soup

What You Need:

  • 3 C butternut squash, peeled and cubed
  • 1 (8 oz) pkg. fresh mushroom slices
  • 1 C celery, chopped
  • 1 small onion, chopped
  • 1 garlic clove, minced
  • 6 chicken thighs, boneless and skinless, halved
  • 1 C wild rice
  • 4 C chicken broth
  • 1 t thyme
  • 1 t salt
  • 1/4 t pepper
  • ½ C whipping cream
  • 3 T cornstarch
How to Make It:

  1. Place the squash, mushroom slices, celery, onion and garlic into the crock pot.
  2. Lay the chicken thighs on top.
  3. Next add in the uncooked rice.
  4. Pour in the broth.
  5. Add the thyme, salt and pepper being sure to stir well to incorporate all the ingredients together.
  6. Cover and cook on low 6 hours.
  7. Pour the whipping cream into a small bowl.
  8. Whisk in the cornstarch until smooth.
  9. Stir the cornstarch mixture into the crock pot.
  10. Place the heat on high, cover and continue cooking an additional 30 minutes.
Serving Size: 6

Boneless chicken thighs can be hard to find in some areas. If you are having trouble finding them you can use thighs with the bone in. Be sure to remove the skin before placing them into the crock pot. Before adding the whipping cream mixture remove the thighs and shred the meat off the bone using 2 forks.
