Beyond The Typical Sandwich - Holiday Leftovers Deserve More Creative Direction


We are all familiar with the classic turkey or ham sandwich. You know, there was way too much turkey
or ham at the holiday feast and now it can either sit in your fridge and go bad, or you can make sandwiches with the leftovers, over, and over, and over... you get the point. Sure, your home-cooked turkey tastes great and the sandwiches are tasty, but unless you do something different, even your best sandwiches will get boring quickly. Here are a few ideas to keep your taste buds entertained.

Dress It Up

A turkey sandwich will always be a turkey sandwich and a ham sandwich will always be a ham sandwich. That is, unless you dress up your sandwich and bring out an entirely different flavor with the simple addition of a few key ingredients. For instance, instead of the typical mayonnaise and mustard, try adding a new spice to your favorite sandwich. Try using a chipotle mayo or sweet chili mayo, or use exotic sprouts instead of lettuce, or arugula, shredded cabbage, or even sauerkraut.

Think high-end boutique sandwich shop when you are creating your masterpiece. If you are a fan of avocado, try adding a few slices to your sandwich, or experiment with different types of cheese. When you are trying to break out of the holiday sandwich blues, toppings can be your best friend. Put away your regular sandwich cheese and grab the bleu cheese and bleu cheese dressing. Rethink each layer of your sandwich and use something you've never used before. That is how you dress up that slice of turkey or ham.

Change Clothes

If you have your toppings down to your liking, or don't want to experiment too far from normal, you can always change the method you use to close up your sandwich ingredients; you know, the bread. You can try a wrap, or grilled on a bun, or even leftover dinner rolls. With hundreds of different kinds of breads, you have an endless supply of possibilities.

Try your next grilled ham and cheese on Rye bread instead of the familiar wheat or white. You can also try authentic Chibatta bread for a distinct and unique taste. Don't forget pita and tortillas. Or, if you are trying to cut the carbs, you can always go naked. Okay, not you, but the sandwich. Use a piece of romaine lettuce to wrap the ingredients and enjoy the crisp, crunchy and healthy alternative to your typical holiday leftover sandwich.

Take a Flavor Trip

Now that you have dressed up your sandwich and changed its clothes, you may also want to experiment with flavors from around the world. Take your typical turkey sandwich on a trip to Italy or Mexico. Dress it up with different flavor combinations and try authentic ingredients to completely make over your sandwich.

For instance, use a peanut flavored sauce, combined with shredded cabbage and some crispy noodles to give your sandwich a Thai flare. Or try a mango chutney with some spicy peppers for a Southwestern sizzle. Choose roasted sweet peppers, sun-dried tomatoes, and sliced olives for a Mediterranean inspired sandwich.

Cheater's Chocolate Fudge

Chocolate Fudge, what can be more tempting? Even though the summer is only
coming now in South Africa, our friends are looking forward to fall and all the festivities around the holidays!

I am very sure that this chocolate fudge recipe will come in very handy, its easy, tasty and oh so sinful.


Cheater's Chocolate Fudge 

Ingredients:

  • 1 can sweetened condensed milk
  • 350g Dark chocolate 64%
  • 150g Milk chocolate 35%
  • 25g butter
  • 1 teaspoon vanilla
  • 1 cup chopped pecans or walnuts, optional

Preparation:

1. Lightly grease a 23cm square pan; line with a piece of plastic wrap, leaving the ends out to cover the finished fudge. The ends will also serve as "handles" which will help you lift the fudge out of the pan.
2. Heat the condensed milk, chocolate, butter, and vanilla in a double boiler over simmering water.
3. Stir until the chocolate is melted and mixture is smooth.
4. Stir in nuts, if using; pour into the prepared pan.
5. Spread gently then cover lightly with the ends of the plastic wrap.
6. Chill until firm.
7. Lift out of the pan and cut into small squares.

Quick Chocolate Sauce Recipe

Chocolate Sauce To Die For

Summer and Ice cream are synonymous. There is nothing like ice cream as

dessert after a tasty summer meal. I always think there is nothing that tastes
better with ice cream as a really good hot chocolate sauce.

Here is a very good recipe that is easy and fast. Make sure you use a really good quality chocolate for this recipe.

Ingredients for your chocolate sauce:

  • 150ml Thick cream
  • 15ml Castor sugar
  • 75g 70% chocolate chopped
  • 15ml Rum (or rum essence if children    are going to eat it)

Method for your chocolate sauce:

  1. Slowly heat the cream and castor sugar to a boil
  2. Add the chocolate and stir until all the chocolate has dissolved
  3. Add the rum
  4. Pour your chocolate sauce into a bottle
  5. Let the chocolate sauce cool
  6. Cover the chocolate sauce and store for up to 10 days
  7. To heat the sauce place the bottle, after removing the cap, in hot water or microwave it for about 2
  8. minutes until hot.

Honey and Pecan Whole Wheat Waffles


 Who can resist waffles fro breakfast! Normally time is the problem, But with this recipe you can have them ready in a few minutes, no need to get up hours before breakfast to prepare them, yet they are good enough to serve to visitors. Add a nice cup of coffee and you are set for the day.
                                                                                                                                     
What You Need:
  • 2 C of baking mix
  • 1/2 C whole wheat flour
  • 1 1/2 C of milk
  • 2 T sugar
  • 2 T of canola oil
  • 1 egg
  • 3/4 C of honey
  • 1/2 C of pecan halves

How to Make It:

Spray a waffle iron with a non stick cooking spray and allow the iron to heat.
Toss together the baking mix and flour.
Add the milk, sugar, canola oil and egg and stir until well blended.
Pour the batter onto the hot waffle iron.
Bake 5 minutes or until the steaming stops.
Mix the honey and pecans halves together.
Pour the honey mixture over the top of the waffles before serving.

Makes 6 servings

Preparation Time: approximately 5 minutes
Baking Time: approximately 5 minutes per batch
Total Time: approximately 10 minutes per batch
