Fruit and Nuts Flapjacks Recipe

What You Need:

  • 2 C of flour
  • 1 C of sugar
  • 2 t baking powder
  • 1 t baking soda
  • 1 t cinnamon
  • 1/2 t salt
  • 1/2 t ground ginger
  • 1/2 t ground cloves
  • 2 eggs
  • 1 3/4 C of buttermilk
  • 3 T of vegetable oil
  • 1 3/4 C of apples, peeled and shredded
  • 1/2 C of pecans, chopped
How to Make It:

  1. Toss together in a large mixing bowl the flour, sugar, baking powder and soda.
  2. Add in the cinnamon, salt, ginger and cloves and toss again to combine.
  3. Break the two eggs into a separate bowl.
  4. Pour the buttermilk and oil into the eggs and whisk until completely combined.
  5. Fold in the apples and pecans until blended in well.
  6. Grease a griddle or skillet and place over medium heat.
  7. Pour the batter by 1/4 C on to the hot griddle.
  8. Cook 4 minutes or until bubbles begin to appear around the edges.
  9. Flip and continue cooking an additional 4 minutes or until golden brown.

Makes 1 1/2 dozen flapjacks

These flapjacks are not only sweet but filled with spices. They make breakfast a special event. Serve them with apple jelly instead of syrup for something a little special. Leftovers can be frozen for up to 2 months.

Grape and Pecan Thermos Dessert

What You Need:

  • 1 (4 oz) pkg. cream cheese at room temperature
  • 1 (4 oz) container sour cream
  • 1/4 C white vinegar
  • 1/2 tsp vanilla extract
  • 2 lbs seedless grapes
  • 2 oz pecans, chopped (here you can use your Cuisinart SG 10 Electric Spice and Nut Grinder)
  • 1 tbsp brown sugar
How to Make It:
  1. Place the softened cream cheese in a large mixing bowl.
  2. Add the sour cream and stir to blend.
  3. Pour in the vinegar and the vanilla extract.
  4. Mix well being sure the mixture is smooth and creamy.
  5. Fold in the grapes carefully making sure all the grapes are covered well with the creamy mixture.
  6. Refrigerate until chilled about 30 minutes.
  7. Stir in the pecans and brown sugar.
  8. Place in a pre chilled thermos. (Your Thermos Nissan)
Serves 2

Kids love this wonderful dessert. If you or your child do not like nuts or are allergic to them stir in a few raisins instead.

Creamy Apple Cheddar Soup

What You Need:

  • 2 TBSP canola oil
  • 3 medium Granny Smith apples, peeled, cored, and chopped
  • 1 potato, peeled and chopped
  • 1 stalk celery, chopped
  • 1/4 C onion, chopped fine
  • 1/8 tsp. ground thyme
  • 1/4 C white wine
  • 5 C chicken broth
  • 4 C Cheddar cheese, shredded
  • 1/2 C heavy cream
  • 1/8 tsp. nutmeg
  • 1/8 tsp. pepper
How to Make It:

  1. Heat the oil to hot but not smoking in a large soup pot over medium heat.
  2. Place the apples, potato, celery and onion into the hot oil.
  3. Cook together for 5 minutes.
  4. Stir in the thyme and continue cooking an additional 5 minutes.
  5. Pour the wine into the pot and stir well.
  6. Pour in the chicken broth and continue cooking 35 minutes.
  7. Pour the entire mixture into a blender, such as the Cuisinart CBT 700 Die Cast 700 Watt Blender.
  8. Puree until smooth.
  9. Return the mixture to the soup pot.
  10. Turn heat to lowest temperature.
  11. Stir in the cheese and cream.
  12. Sprinkle with the nutmeg and pepper.
  13. Continue cooking on low until heated through about 15 minutes.
  14. Be careful not to being the soup to a boil or the cheese and cream will curdle.

What You Need:

  • 1 C butter or margarine, room temperature
  • 2 1/2 C sugar
  • 1/2 C light brown sugar, firmly packed
  • 1 C sour cream
  • 2 tsp. vanilla extract
  • 6 eggs
  • 3 C all purpose flour
  • 2 tsp. cinnamon
  • 1/2 tsp. baking soda
  • 2 Granny Smith apples, cored, peeled and chopped
  • 2 ripe bananas, sliced thin
How to Make It:

  1. Place the butter in a large mixing bowl.
  2. Add the both sugars to the bowl.
  3. With an electric mixer, such as one of the KitchenAid Artisan 5-Quart Stand Mixers, on medium speed beat until light and fluffy about 3 minutes.
  4. Add the sour cream and vanilla.
  5. Continue beating 1 minute.
  6. Add the eggs and beat for another 2 minutes or until all the ingredients are incorporated together.
  7. In a separate bowl sift together the flour, cinnamon and baking soda.
  8. Pour the dry mixture into the egg mixture.
  9. Beat on low speed just until blended.
  10. Gently fold in the apples and bananas.
  11. Heat the oven temperature to 325 degrees.
  12. Spray a Bundt pan with a non stick cooking spray.
  13. Pour the batter into the prepared pan.
  14. Bake 80 minutes or until a toothpick inserted in the center comes out clean.

What You Need:

  • 3 tbsp canola oil
  • 1 small eggplant, sliced
  • 2 potatoes, skin left on and sliced

  • 1 green bell pepper, cut into strips

  • 1 garlic clove, minced
  • 1/2 tsp parsley
  • 1/2 tsp basil
How to Make It:

  1. Place the oil in a large skillet over medium heat.
  2. Heat the oil to hot but not smoking.
  3. Add the eggplant and potatoes.
  4. Layer on the onions.
  5. Layer in the pepper strips.
  6. Last lay the tomatoes on the top.
  7. Sprinkle with the garlic, parsley and basil.
  8. Allow the layers to simmer in the hot oil for 20 minutes.
  9. If the mixture seems to be cooking to quickly lower the heat to medium low.
  10. Mixture may seem slightly dry but do not add water.
  11. Continue cooking 15 minutes or until vegetables is fork tender.
  12. Use a spatula to remove in sections and layer into a wide mouth thermos.
Serves 4

This dish is great out of a thermos. Sprinkle a little parmesan cheese over the top before eating.

Tasty Mocha Cake Recipe You Can Make With A Stand Mixer


f you have a good stand mixer, such as the KitchenAid Artisan 5-Quart Stand Mixers or the Cuisinart SM-55 5-1/2-Quart Stand Mixers, you will have no problem making this mocha cake recipe as it can be made using an electric stand mixer from the beginning of the recipe to the end.
Make this tasty cake to serve as dessert at your next dinner party and it will be a hit. You can decorate it with mocha icing or it can simply be served with ice cream, fresh cream or custard. Your choice will depend on how you want to serve the cake.

Ingredients for your mocha cake:
  • 2 Cups cake flour
  • 3 Eggs
  • 1/2 Cup oil
  • 2 Teaspoons vanilla essence
  • 5 Tablespoons Cacao
  • 11/2 Cup sugar
  • 1 Cup of very strong coffee (you can use your Cuisinart DCC 1200 12 Cup Brew Central Coffeemaker to make the coffee)
  • 31/2 Teaspoons of baking powder
  • 1/4 Teaspoon of salt
Method:
  1. Preheat the oven to 350 degrees of Fahrenheit
  2. Beat the eggs very well.
  3. Gradually add the sugar
  4. Add the oil to the hot coffee and bring it to the boil
  5. Add this boiling mixture to the egg and sugar mixture and beat until the sugar has dissolved
  6. Add the vanilla
  7. Sift all the dry ingredients and add to the mixture
  8. Bake the cake in 2 deep 9 inch prepared cake tins for about 25-30 minutes until done.
