Apple Veggie Shrimp Stir Fry



What can be easier to serve than a quick stir fry? Serve this at an informal dinner party and your guests will really enjoy themselves! Easy cooking Recipes can be used for all occasions, not only for quick family meals.


What You Need:

  • 3 TBSP canola oil, divided
  • 1 lb. shrimp, peeled and de-veined
  • 2 Golden Delicious apples, cored and thinly sliced
  • 1 C green onion, chopped
  • 1 sweet red pepper, seeded and cut into strips
  • 1 (6 oz.) pkg. frozen snow peas, thawed
  • 1/2 C cold water
  • 1/4 C cider vinegar
  • 1/3 C firmly packed brown sugar
  • 4 tsp. cornstarch
  • 1 TBSP soy sauce
  • 1 tsp. ground ginger

How to Make It:

  1. Place 1 TBSP of canola oil in to a large skillet over high heat.
  2. Heat until the oil is hot but not smoking.
  3. Add the shrimp and stirring constantly cook 2 minutes or until the shrimp turns pink.
  4. Place the shrimp in a bowl and set off to the side.
  5. Place another TBSP of the oil into the skillet and allow to heat.
  6. Add the apple slices and stirring continuously cook 1 minute.
  7. Remove and place in the bowl with the shrimp.
  8. Pour the last TBSP of oil into the skillet and heat again.
  9. Add the onion, pepper and snow peas.
  10. Stirring continuously cook for 2 minutes.
  11. Place in the bowl with the shrimp.
  12. Combine the water and vinegar together in a bowl being sure to stir well.
  13. Add the brown sugar, cornstarch, soy sauce and ginger.
  14. Mix well being sure all the ingredients is incorporated together.
  15. Pour into the heated skillet.
  16. Stirring continuously bring the mixture to a boil.
  17. Continue cooking until the sauce thickens to your liking.
  18. Add the shrimp ingredients to the skillet once the sauce has thickened.
  19. Place the heat on low and continue cooking 6 minutes or until completely heated through.

Serves 4


Place over Chow Mien noodles before serving for that perfect Chinese meal.

Almond Wild Rice Chicken Soup

What You Need:

  • 2 T butter
  • 1/2 C dry wild rice
  • 6 C fat free low sodium chicken broth
  • 1/2 C onion, minced
  • 1/2 C celery, chopped
  • 2 C chicken, cooked and chopped
  • 1/2 C slivered almonds, toasted

How to Make It:

  1. Place the butter into a small skillet over medium heat.
  2. Allow the butter to melt completely then add the dry rice.
  3. Reduce the heat to low and stirring occasionally sauté the rice for 10 minutes.
  4. Remove the rice from the skillet and place in the crock pot.
  5. Pour in the chicken broth and stir.
  6. Add the onion and celery and stir to combine well.
  7. Set the heat setting to low, cover the crock pot and cook 4 hours.
  8. Add the chicken and continue cooking on low 1 hour.
  9. Ladle the soup into bowls and top with the slivered almonds.

Serving Size: 8

This soup is very low in fat due to the fat free chicken broth. Regular chicken broth can be added if you prefer. Chopped winter squash is also a great addition to the soup.

Sometimes suitable holiday cooking recipes needs to be easy. You do not always have a lot of time to prepare the food for a holiday meal. This recipe needs very little from you. The flavor comes from the sauce that is very easily made at the last moment.

Aleppo Chicken


Ingredients:

  • 1 chicken (about 4 lb boiler)
  • 1 cup fresh cream
  • ½ lb mushrooms
  • 1 onion
  • Piece of celery or celery salt
  • 1 glass sherry
  • 1 carrot
  • 4 egg yolks
  • ¼ lb blanched almonds
  • Salt to taste

Method:

  1. Boil chicken in enough salt water to cover, with carrot, onion and celery or celery salt until tender.
  2. Remove chicken from stock and put it on a serving dish to keep warm.
  3. Fry mushrooms in butter and set aside.
  4. Beat the fresh cream, egg yolks and add the sherry, almonds, mushroom and ½ pint chicken stock and cook over low heat until mixture thickens.
  5. Pour over chicken and serve while still hot.
  6. Serve with rice and a salad of your choice.

Valentine Food - Be Mine Fruit Medley

Valentine food needs to be tasty and fun, but there is no need for it to be totally unhealthy. Make this salad as a treat for all on Valentines Day. Everyone will love this valentine food.

Be Mine Fruit Medley

What You Need:

  • ¼ C canola oil
  • ¼ C orange juice
  • 3 T lemon juice
  • 2 T sugar
  • 1 (20 oz) can pineapple chunks, drained
  • 1 (10 oz) can Mandarin oranges, drained
  • 2 C seedless green grapes, halved
  • 1 fresh pear, sliced
  • 1 banana, sliced
  • 1 apple, sliced
  • ½ C Maraschino cherries, halved
  • ¼ C mini marshmallows

How to Cook It:

  1. Place the oil in a mixing bowl.
  2. Add the orange and lemon juice and whisk until well combined.
  3. Stir in the sugar and continue stirring until the sugar has completely dissolved.
  4. Place the pineapple, oranges, grapes, pears, banana and apples into a large salad bowl.
  5. Add the cherries and marshmallows and toss the ingredients together well.
  6. Pour the juice mixture over the fruit and stir to cover the fruit completely.

Serving Size: 8

As Valentine's Day is approaching, we are all looking at Valentines Food. Here is a fun way to prepare potato pancakes for Valentines day.

Have My Heart Potato Pancakes


What You Need:

  • 1 (14 oz) can chicken broth
  • ½ t pepper
  • 1 green onion, chopped
  • 1 ½ C instant potato flakes

How to Make It:

  1. Pour the broth into a saucepan over medium high heat.
  2. Stir in the pepper well.
  3. Bring the broth to a brisk boil then remove from the heat.
  4. Gently stir in the green onion.
  5. Pour the potato flakes into the pan and let them stand until they have absorbed all the broth liquid.
  6. Lay a heart shaped cookie cutter in a skillet over medium heat.
  7. Fill the cookie cutter with the potato mixture.
  8. Cook 5 minutes then flip and continue cooking 3 minutes or until browned.

Serving Size: 4

Valentines food - Broiled Shrimp and Bacon Wrappers

Here is another tasty and really fun Valentines food recipe. Enjoy!

Broiled Shrimp and Bacon Wrappers

What You Need:

  • 16 jumbo shrimp, peeled and deveined
  • 8 strips of bacon cut in half lengthwise
  • ¼ C butter style shortening, melted
  • 1 T Parmesan cheese, grated
  • 1 garlic clove, minced fine
  • 1 t lemon juice

How to Cook It:

  1. Turn on the broiler and allow it to heat while preparing the shrimp.
  2. Wrap one slice of bacon around each piece of shrimp and secure it with a wooden toothpick.
  3. Place the melted shortening in a mixing bowl.
  4. Stir in the Parmesan cheese until blended.
  5. Add the garlic and lemon juice and whisk until completely combined.
  6. Brush each shrimp thoroughly with the sauce.
  7. Place in a single layer on a broiler pan.
  8. Broil 6 minutes, turn and continue broiling 5 minutes or until the bacon is crisp.

Serving Size: 4


These little wonders make great appetizers before the Valentine’s meal or can be used as the main course. ¼ t salt and ¼ t of pepper can be added to the sauce if you wish. Seafood is always a good idea for Valentines Food.

Valentine Food - New York Strip with Balsamic Mushrooms

New York Strip with Balsamic Mushrooms


Portobello mushrooms have a great meaty taste and go well with any type of steak. By adding the garlic and vinegar it gives them a special robust flavor.


What You Need:

  • 2 (8 oz) New York Strip steaks (1 inch thick)
  • ½ t coarse salt
  • 1 T olive oil
  • 1 T unsalted butter
  • 6 oz. Portobello mushrooms, sliced
  • 1 clove of garlic, minced
  • 1 T balsamic vinegar

How to Make It:

  1. Preheat the broiler.
  2. Sprinkle both sides of the steaks with the salt.
  3. Place the steaks on a broiler pan.
  4. Broil 4 minutes then turn and continue broiling 3 minutes for medium rare.
  5. Remove the steaks and place on plates loosely covered with foil.
  6. Place the oil and butter into a skillet over medium heat.
  7. Let the butter melt being sure to stir it into the oil.
  8. Add the sliced mushroom and stir to coat.
  9. Cook the mushrooms 4 minutes or until fork tender.
  10. Add the garlic, stir and cook an additional 30 seconds.
  11. Remove the skillet from the heat and add the vinegar stirring to coat.
  12. Uncover the steaks and spread the mushroom mixture over the top just before serving.
