Curried Rice Salad
Ingredients:
- 2 cups chilled cooked rice
- 2 tbsp seedless raisins
- 2 tbsp chopped parsley
- 1 shredded green pepper
- 2 tbsp drained red pimentos cut in strips
- 2 tbsp chopped spring onions
- ½ cup olive oil
- ¼ cup vinegar
- 1 tbsp sugar
- ½ tsp curry powder
- Salt and pepper to taste
- Salad greens
- Green pepper rings
- Tomato wedges
- 1 tbsp lemon juice
- 1 clove chopped garlic
Method:
Salad:
- Using two forks, toss together the rice, green pepper, pimentos, raisins, parsley and onions
- Chill the mixture thoroughly.
Salad Dressing:
- Combine oil, vinegar, lemon juice, garlic, sugar, curry powder, salt and pepper.
- Allow the dressing to stand for a while for the flavors to develop
- Just before serving pour the vinegar mixture over the salad and toss well.
- Arrange the salad in a large bowl and garnish with crisp greens, green pepper rings and tomato wedges.
