A festive Rice Salad For All Occasions - Curried Rice Salad

I love rice salad and this tasty curried rice salad is no exception. It tastes good with ANY kind of meat so trying it is really worth the trouble, If you have a Zojirushi 6 Cup Rice Cooker Steamer having the rice ready and perfect for this salad will be no problem.

So, here is the recipe, I hope you will enjoy it as much as my family does.

Curried Rice Salad

Ingredients:

  • 2 cups chilled cooked rice
  • 2 tbsp seedless raisins
  • 2 tbsp chopped parsley
  • 1 shredded green pepper
  • 2 tbsp drained red pimentos cut in strips
  • 2 tbsp chopped spring onions
  • ½ cup olive oil
  • ¼ cup vinegar
  • 1 tbsp sugar
  • ½ tsp curry powder
  • Salt and pepper to taste
  • Salad greens
  • Green pepper rings
  • Tomato wedges
  • 1 tbsp lemon juice
  • 1 clove chopped garlic

Method:

Salad:
  1. Using two forks, toss together the rice, green pepper, pimentos, raisins, parsley and onions
  2. Chill the mixture thoroughly.
Salad Dressing:
  1. Combine oil, vinegar, lemon juice, garlic, sugar, curry powder, salt and pepper.
  2. Allow the dressing to stand for a while for the flavors to develop
  3. Just before serving pour the vinegar mixture over the salad and toss well.
  4. Arrange the salad in a large bowl and garnish with crisp greens, green pepper rings and tomato wedges.
This is a delicious salad with fried chicken, grilled meat and roasts.
