If you do not want to eat raw eggs you can replace the eggs with a little milk that you add to the mixture until you have the right consistency. You will not have the egg white to fold in so the cake will turn out VERY rich, but I know of people that make it that way. I do not mind the eggs so this is how I make it.
Before you can start this coffee cake you have to make a coffee extract.
Ingredients:
- ½ lb Butter
- 2 Cups icing sugar1 Tablespoon coffee extract
- 1 ½ packet of plain biscuits (Marie Biscuits in South Africa)
- 3 Eggs
- 1 Teaspoon vanilla
- Sweet wine as needed
Method:
- Mix the butter and the yolks of the eggs well
- Add the coffee extract, icing sugar and vanilla essence
- Beat the egg whites until stiff and fold into the butter mixture
- Dip the biscuits in the wine and pack one layer at the bottom of your bowl
- Spread a layer of the butter mixture over the biscuits
- Repeat the layers until all the ingredients have been used.
- Leave to set in the fridge.
OK, I'm sure we all agree this is one of the most decadent of all easy coffee recipes! If you do not have a sweet tooth you will not enjoy it.
