Orange Pudding:
Dough Ingredients:
- ¾ cup flour
- ½ cup sugar
- ½ cup milk
- 2 ozs. Butter
- ¼ teaspoon salt
- 1 tablespoon apricot jam or syrup
- ½ bicarbonate of soda
- ½ teaspoon grated Lemon rind
- 1 Egg
Method:
- Cream the eggs and sugar
- Add the melted butter
- Add the rest of the ingredients except the bicarbonate of soda and milk
- Dissolve the bicarbonate of soda in the milk
- Add the milk mixture
Syrup Ingredients:
- 1 cup water
- ½ cup sugar
- Pinch of salt
- ½ cup orange juice
- 1 heaped teaspoon of butter
Method:
- Boil the ingredients and pour into a deep oven dish
- Pour the dough into the syrup
- Bake at once in an oven of 350-375 degrees Fahrenheit for about 20-25 minutes until done (ovens differ, you will have to experiment a little here)
- Serve with custard and cream
