Coffee Cake Recipe

I cannot think of a more fitting dessert than a tasty coffee cake served with fresh coffee. The coffee can be made with your Hamilton Beach Brew Station. Make a little more than you want to drink and use ½ cup of the coffee to bake this coffee cake.

Coffee Cake Recipe

Ingredients:
  • 2 cups flour
  • 1 tablespoon of syrup
  • 21/4 teaspoon baking powder
  • ½ cup strong black coffee
  • ¼ teaspoon salt
  • ½ cup butter
  • 1 cup sugar
  • ½ cup raisins
  • ¼ currents
  • Grated rind of one lemon
  • 1 teaspoon lemon juice
  • 2 eggs
Method:
  1. With a stand mixer (such as the Kitchenaid Artisan 5-Quart Stand Mixers) cream the butter, syrup and the sugar very well.
  2. Add the eggs one at a time, beating well in between adding each egg
  3. Fold in the dry ingredients and the coffee alternating the two, fold in lightly and do not beat. Only mix until the ingredients are combined well
  4. Spoon into a lined greased baking tin and bake for about 35 minutes at 350 degrees Fahrenheit
  5. Decorate as preferred
