Coffee Cake Recipe
Ingredients:
- 2 cups flour
- 1 tablespoon of syrup
- 21/4 teaspoon baking powder
- ½ cup strong black coffee
- ¼ teaspoon salt
- ½ cup butter
- 1 cup sugar
- ½ cup raisins
- ¼ currents
- Grated rind of one lemon
- 1 teaspoon lemon juice
- 2 eggs
Method:
- With a stand mixer (such as the Kitchenaid Artisan 5-Quart Stand Mixers) cream the butter, syrup and the sugar very well.
- Add the eggs one at a time, beating well in between adding each egg
- Fold in the dry ingredients and the coffee alternating the two, fold in lightly and do not beat. Only mix until the ingredients are combined well
- Spoon into a lined greased baking tin and bake for about 35 minutes at 350 degrees Fahrenheit
- Decorate as preferred
