Ingredients:
½ Cup of butter
½ Cup strong black coffee
1 Cup sugar
2 Cups flour
2 Eggs
2 ½ Teaspoons of baking powder
Pinch of salt
3 Tablespoons of golden syrup
1 Teaspoon of cinnamon
1 Teaspoon of vanilla essence
Method:
Preheat the oven to 350 Degrees Fahrenheit
Prepare two 9 inch cake pans

Add the syrup and continue beating the mixture

What You Need:
1 C + 2 tbsp flour
1/4 C + 1 t sugar, divided
1 t baking powder
1/4 t baking soda
1/4 t salt
1/2 C sour cream
2 T of vegetable oil
2 T egg, beaten
1/3 C raisins
How to Make It:
Dump the flour in a mixing bowl.
Add 1/4 C sugar and toss to combine.
Toss in the baking powder, soda and salt until thoroughly blended.
In a different bowl place the sour cream.
Pour in the vegetable oil and add the egg.
Whisk until the ingredients are combined together well and smooth.
Stir the sour cream mixture into the flour mixture just until the dry ingredients are moistened.
Fold in the raisins being sure they are incorporated well into the batter.
Set the oven temperature to 400 degrees and allow the oven to heat while finishing the muffins.
Line a muffin tin with six paper liners.
Fill each muffin cup half full of the batter.
Sprinkle the top of each one with the remaining sugar.
Bake 15 minutes or until a toothpick inserted in the center comes out clean.
Allow the muffins to cool 5 minutes before removing to a rack to cool to desired temperature.

6 T olive oil
1/4 C orange juice
1/4 C white balsamic vinegar
1/4 C fresh cilantro, minced
2 T honey
1/2 t chili sauce
1 garlic clove, minced
1/2 t salt
2 large apples cut into wedges
1 (5 oz.) pkg. spring mix salad greens
1 C walnut halves
1/2 C blue cheese, crumbled
How to Make It:
Place the olive oil into a mixing bowl.
Add the orange juice and the vinegar.
Whisk well to combine the ingredients.
Gently stir in the cilantro.
Whisk the honey and chili sauce into the mixture well.
Add the garlic and the salt and mix to completely combine the ingredients.
Pour 1/4 C of the mixture into a sealed plastic bag.
Add the apples to the bag.
Seal and turn to coat the apples well.
Refrigerate for at least 30 minutes.
Cover the remaining dressing and refrigerate until ready to use on the salad.
Drain the apples from the marinade but save the marinade to use for basting.
Thread the apples onto 6 soaked wooden skewers.
Place the apples over medium heat on the grill.
Cover and cook 6 minutes or until golden brown.
Turn and continue cooking an additional 6 minutes or until the apples are tender.
Place the greens into a large salad bowl.
Add the walnuts and cheese and toss to combine well.
Add the apples to the salad.
Pour the refrigerated dressing over the salad and toss.

Add the shrimp and stirring constantly cook 2 minutes or until the shrimp turns pink.
Place the shrimp in a bowl and set off to the side.
Place another TBSP of the oil into the skillet and allow to heat.
Add the apple slices and stirring continuously cook 1 minute.
Remove and place in the bowl with the shrimp.
Pour the last TBSP of oil into the skillet and heat again.
Add the onion, pepper and snow peas.
Stirring continuously cook for 2 minutes.
Place in the bowl with the shrimp.
Combine the water and vinegar together in a bowl being sure to stir well.
Add the brown sugar, cornstarch, soy sauce and ginger.
Mix well being sure all the ingredients is incorporated together.
Pour into the heated skillet.
Stirring continuously bring the mixture to a boil.
Continue cooking until the sauce thickens to your liking.
Add the shrimp ingredients to the skillet once the sauce has thickened.
Place the heat on low and continue cooking 6 minutes or until completely heated through.
