Smoked Salmon And Double Avocado Sandwich

Tasty
  • 1 medium beefsteak tomato
  • 1 small red onion
  • 1 avocado
  • 2 lemons, one juiced, one cut in wedges
  • 2 Tbsp sour cream
  • 1 Tbsp mayonnaise
  • salt and pepper
  • 1/2 lb smoked salmon, thinly sliced
  • 4 medium size hard rolls
  • Romaine lettuce leaves

  1. Slice the tomato and the onion into thin circles, set aside.
  2. Halve the avocado, removing pit and skin, setting half the avocado in a bowl and slice the other half into thin wedges.
  3. To the avocado in the bowl, add most of the lemon juice (sprinkling the remaining amount over the sliced avocado wedges), sour cream and mayonnaise. Add salt and pepper to taste.
  4. Cut the rolls in half and lay out on a work surface.
  5. Spread the avocado-mayo mixture on each cut side of rolls.
  6. Put the sandwiches together in these layers: lettuce, tomato, onion, smoked salmon, avocado wedges.
  7. Put top half of roll on and serve immediately or wrap tightly for transport to picnic.
  8. Include lemon wedges in with each sandwich for garnish and extra lemon juice on avocado slices if desired.

Double Chocolate Toffee Ice Cream


Double Chocolate Toffee Ice Cream is a recipe I will be using now in South Africa as summer is here.
With an ice cream maker (such as the Breville BCI600XL Smart Scoop Ice Cream Maker); it is as easy as pie to make this.

What You Need:
  • 1 C of sugar
  • 1/4 C unsweetened cocoa powder
  • 2 C whipping cream
  • 1 C of milk
  • 1 t vanilla
  • 1/8 t salt
  • 3/4 C chocolate covered toffee candy, chopped
How to Make It:
  1. Place the sugar and cocoa powder in a large mix bowl and toss to combine.
  2. Pour the whipping cream and milk into the bowl.
  3. Add the vanilla and salt and stir until the sugar has completely dissolved.

  4. Pour the mixture into the freezer canister.
  5. Freeze according the manufacturer's directions.
  6. Stir in the toffee pieces and allow the ice cream to ripen 4 hours.
Makes 8 servings

A great way to serve this ice cream is in a chocolate dipped cone. 
  • Place a 1/2 C of semisweet chocolate pieces in a microwave safe bowl. 
  • Microwave the chocolate at 70 percent power or medium high heat for 1 minute. 
  • Stir and continue microwaving for 1 to 3 minutes or until the chocolate is smooth. 
  • Dip the cones into the melted chocolate about 1/3 of the way up the cone. 
  • If the chocolate is too thick, stir in 1 t of melted shortening. 
  • Place the cones top side down on wax paper until the chocolate is set.

Most Loved Holiday Recipe - Sweet Potato Pie

Ingredients: 

2 cups sweet potatoes, cooked and drained
4 tablespoons margarine, melted
3 eggs
1 cup sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
3/4 cup milk
1 teaspoon vanilla
1 9" pie shell, baked
1/4 cup chopped pecans 

Instructions: 
  1. Mash together your cooked sweet potatoes with melted butter or margarine.
  2. Whip in eggs, sugar, cinnamon and nutmeg. 
  3. When well mixed add in the milk and vanilla. 
  4. Pour it all into your baked pie shell and heat in the oven for about 40 minutes at 350 degrees F. 
  5. It's done when the center is somewhat firmed up. 
  6. Scatter chopped pecans over the top of the pie before serving. 
Of course I love serving this pie with whipped cream flavoured with Sherry.

Thanksgiving Leftover Quiche

great for those office parties and after Thanksgiving get together.

Ingredients:
  • 5 large eggs
  • 2 1/2 -3 cups leftover stuffing or half of a 6 oz package bread stuffing mix, prepared according to package directions
  • 1 cup shredded Swiss cheese
  • 1 cup diced cooked turkey
  • 1/3 cup thinly sliced green onions
  • 1/2 cup sliced mushrooms
  • 1 cup half and half
  • Salt and pepper to taste
Instructions:
  1. Beat one egg and add stuffing to it. 
  2. Press this into the bottom of a deep pie dish or a quiche pan if you have one, it will serve as a mock-crust for your quiche. 
  3. Bake on the bottom rack of the oven for 15 minutes at 425 degrees F.
  4. Sprinkle cheese evenly over the stuffing-crust. Layer in the turkey, onion, mushrooms in any order you wish. 
  5. Beat remaining 4 eggs in a small bowl. 
  6. Stir in the half and half. 
  7. Season with salt and pepper to your tastes. 
  8. Pour egg mixture evenly over the layers in the pan. 
  9.  Bake on the bottom rack of the oven for 30 minutes at 350 degrees F. 
  10.  Let it stand and cool for about 15 minutes to firm up before cutting and serving.
